Healthy Connections Recipe

Thanks for reading our summer issue of Healthy Connections. Enjoy Heidi Ferris’s favorite salad dressing with your next summer salad!

Champagne Vinaigrette Dressing

1 medium shallot
1 1/2 tsp. minced garlic
1 1/2 tsp.  Dijon Mustard
1 cup Champagne, white wine or sherry vinegar
1/2 cup sugar
1 1/2 tsp. salt
2 cups vegetable oil
1/2 cup olive oil
1 small bunch Green Onions
1/2 tsp. thyme

Peel, half and roast shallots until they are caramelized. Let cool and place into blender.  Add remaining ingredients to blender except oil.  Blend on high speed and add oil(slow pour) while blender is on.  Be careful not to over blend.
