Polycystic ovarian syndrome or PCOS is a hormone-related condition in which individuals may often struggle with insulin-resistance. This means that one’s body may not respond appropriately to the amount of insulin that would typically be produced by their body, and as a result those with PCOS are at increased risk of developing conditions such as cardiovascular disease and type 2 diabetes.
Diet is one lifestyle change that can help to combat this. Eating a wide variety of foods including fruits, vegetables, whole grains, and lean proteins is recommended! This recipe incorporates many of these components with the fresh fruits and veggies in the slaw and salsa, the whole grains in the corn tortillas, and lean protein with the spicy shrimp!
Spicy shrimp tacos with creamy cilantro-lime sauce
Ingredients
Spicy Shrimp
• 1 pound large shrimp, shells removed and deveined
• 2 tbsp olive oil
• 1 tsp cumin
• 1/2 tsp chili powder
• 1 tsp paprika
• 1 clove garlic minced
• 1/4 tsp salt
• 1/4 tsp pepper
Cilantro Lime Green Sauce
• 1/2 cup plain low-fat yogurt
• 1/3 cup chopped cilantro
• 2 cloves garlic
• 2 tbsp lime juice
• 1/3 cup chopped scallions
• pinch salt
Slaw
• 3 cups shredded purple or green cabbage
• 1/4 cup chopped scallions
Avocado Tomato Salsa
• 2 medium tomatoes diced
• 1 avocado diced
• 1 jalapeno finely chopped
• 1/4 cup cilantro roughly chopped
• 1 tbsp lime juice
• 1/2 tsp salt
• 6 small tortillas (corn or whole-wheat recommended!)
